New Kent Winery is kicking off spring with a full lineup outdoor festivities including live music, themed events, morning yoga, Chesapeake Bay-inspired dinners and more. Also embracing the warmer weather is New Kent’s tasting room kitchen, whose small plates boast flavorful spring ingredients.
Recently sampled on the winery’s expansive tasting room patio was a Smoked Salmon and Cucumber Ribbon Salad. The light and refreshing salad pairs wonderfully with New Kent Winery’s White Norton, a semi-dry and slightly pink wine derived from red grapes. Read below to recreate the perfect pairing at home.
Smoked Salmon and Cucumber Ribbon Salad
Recipe adapted from New Kent Winery
Ingredients
1/4 cup olive oil
3 Tbl. minced shallot
2 Tbl. fresh lemon juice
1 tsp. caraway seeds
1 English cucumber
2 bunches of watercress, cleaned and trimmed
1 small Granny Smith apple, cored and thinly sliced
8 oz. smoked salmon
Yield: 4
Directions
In a bowl, whisk together olive oil, minced shallot, fresh lemon juice and caraway seeds. Season with salt and pepper.
Using a vegetable peeler, cut cucumber into long strips to form ribbons.
Place trimmed watercress on a platter and scatter cucumber ribbons and apple slices on top.
Tuck in smoked salmon slices, drizzle with your favorite dressing and enjoy.
