In celebration of the harvest’s end, 8 Chains North Winery in Waterford invites guests to their inaugural Winegrower’s Wild Game Dinner on Friday, Oct. 27. This unique, four-course wine dinner pairs delectable wild game dishes catered by The Wandering Chef with five of 8 Chains North’s greatest wines, including two of their newest releases—a 2015 Mourvèdre and 2015 Malbec. 8 Chains North Winegrower Ben Renshaw and catering Chef Wes Rosati will enlighten guests about pairing and tasting notes throughout the course of the dinner.
The night begins with enjoying a glass of 8 Chains North’s limited-release Pink Link Rosé and a variety of beautifully crafted small plates in the winery’s intimate Tasting Room. Guests may choose from three appetizers, including Rabbit and Mushroom Pot Pie Turnovers, Braised Wild Boar and Yuzu Roasted Duck Leg Summer Roll Wraps, all of which were specially designed by Chef Wes Rosati of Loudoun County’s The Wandering Chef to pair perfectly with the evening’s selected wines.
Sydney Smith-Marlowe, general manager at 8 Chains North, also notes that Friday night’s event may be the last chance for rosé lovers to taste Pink Link. “The Pink Link Rosé is our ‘happy accident’,” explains Smith-Marlowe. “[A] Viognier that was barrel-aged in neutral French oak for ten months was accidently topped with a gallon of Mourvèdre. Since it was off-pink, we added a gallon of Syrah. It is a very limited release and the dinner is likely the last opportunity it will be available.”
In addition to their reserved rosé, 8 Chains North will also serve bottles of their Off the Mountain Red, Tempranillo, Mourvèdre and Malbec during the four-course dinner, which will be held in the elegant Compass Rose Room.
8 Chains North’s newest Mourvèdre is described as an herbaceous and spicy full-bodied wine containing notes of blackberry and pepper and will be served with a rack of Braised Bison Short Ribs. The Malbec features grapes from 8 Chains North’s very own Furnace Mountain Vineyard and is celebrated for its medium-bodied texture, hints of dark fruit flavors and rich tannins from oak and grape. Chef Rosati will prepare a decadent Dark Chocolate Pot de Crème topped with triple chocolate brownie bits and almond coffee as a rich accompaniment to the Malbec’s full-flavored palate.
Other dishes served by Chef Rosati will include a House-Made Game Charcuterie Plate with a plethora of game including brined and smoked duck ham, pheasant, quail and cured pork belly as well as a Blackened and Seared Flank Steak.
Winegrower’s Wild Game Dinner will be held on Friday, Oct. 27 from 7–9:30 p.m. at 8 Chains North Winery, located at 38593 Daymont Ln., Waterford. Tickets for this unique dining experience must be purchased by Tuesday, Oct. 24 and are $108 for the general public and $98 for members of The Chain Gang Wine Club.
