Pimento Cheese Nachos
Recipe adapted from Tupelo Honey Cafe
Ingredients
Tortilla chips
12 oz. chorizo sausage, cooked
2 cups pimento cheese
1/2 cup pico de gallo
1/2 cup sour cream
1/4 cup fresh cilantro leaves
1/4 cup pickled jalapeño
8 lime wedges
Directions
Melt pimento cheese over low heat, stirring frequently to avoid oil separation.
Arrange tortilla chips on a large serving platter.
Pour hot pimento cheese over the chips and cover evenly.
Evenly disperse the remaining ingredients over the chips, garnish with lime wedges and serve.
Tupelo Honey recommends topping the nachos with caramelized onions, green tomato salsa, roasted peppers and/or black-eyed peas for extra flavor.
